A light, low-carb poke bowl with smoked salmon, mango, cucumber and radish. Ready in 12 minutes.
Why you'll love it
A poke bowl is the perfect light, refreshing meal for warm days. Using konjac rice keeps this version lower in carbs, and whether you go for smoked salmon, crunchy vegetables, creamy mango or all of the above, it's a satisfying, healthy meal that also looks great on the table.
Tips and variations
- Prefer it raw? Use sushi-grade raw salmon instead of smoked.
- No fresh mango? Frozen mango works just as well — just thaw it first.
- Want it spicier? Add a drizzle of sriracha mayo before serving.

- Mix the rice vinegar and agave syrup into the rice, adding a pinch of salt if you like.
- Divide the rice, vegetables, mango and smoked salmon between 2 bowls.
- Sprinkle with sesame seeds and add soy sauce to taste.
