
Spicy mayo, citrus ponzu and mango-chilli. Three easy sauces with supermarket ingredients, ready in five minutes.
The sauce is what turns a bowl of loose ingredients into a poke bowl. At Poke Mar we make them all in house, and these three are the ones people ask for most.
Golden rule
Use sauce sparingly: two tablespoons per bowl is plenty. Any more and the rice gets soggy and you lose the texture.
Keeping them
The spicy mayo and the mango sauce keep for five days in an airtight jar in the fridge. The ponzu keeps for up to two weeks.
Method
- For the spicy mayo, mix the mayonnaise with the sriracha and lime until evenly orange.
- For the ponzu, combine the soy, lemon, mirin and vinegar. Stir and rest for 5 minutes.
- For the mango-chilli, blend the mango with the lime, chilli and honey until smooth.
- Season each sauce separately with salt and pepper.
- Store each one in an airtight jar and refrigerate until serving.
