A fresh quinoa and chickpea salad with cucumber, cherry tomatoes, feta and a lemony vinaigrette. Perfect as a meal on its own or as a side.
Why you'll love it
Looking for an easy way to refresh your diet? This Mediterranean-style quinoa salad is the perfect option for a snack (or even a main course) when you want to feel good about what you're eating.
Chickpeas
Rich in vitamins and minerals, they're also a great source of iron, folate and zinc, and a perfect high-protein, plant-based alternative to meat.
Quinoa
Gluten-free and high in protein, quinoa is one of the few plant foods that contain all 9 essential amino acids in sufficient amounts. And if that wasn't enough, it's also rich in fibre, magnesium, B vitamins, iron, potassium and vitamin E. As we always say... a total superstar.
Tips and variations
- Add grilled chicken or prawns to turn it into a heartier main.
- No feta on hand? Crumbled goat's cheese works beautifully too.
- Make it ahead — it keeps well in the fridge for up to 3 days.
