Why you'll love it

Tofu has a pretty neutral flavour, which means you can easily transform it with a good marinade! Here we use ginger, sesame oil and agave syrup to give the tofu a delicious flavour on its own. Want to take it even further? Whip up a rich peanut sauce to go alongside it.

Tips and variations

  • The longer you press the tofu, the crispier it gets — don't skip this step.
  • No peanut butter? Almond or cashew butter work well in the sauce too.
  • Serve with rice, crushed peanuts and steamed vegetables for a complete meal.

Method

  1. Pat the tofu dry with kitchen paper. Wrap it in a clean tea towel, place something heavy on top and press for at least 2 hours — the longer, the crispier it gets.
  2. Mix all the marinade ingredients except the cornflour. Cut the tofu into cubes and toss with the marinade. Let it sit for at least 2 hours.
  3. Preheat the oven to 180 °C and line a baking tray with baking paper.
  4. Toss the tofu with the cornflour and spread it on the tray. Bake for 20 minutes until golden and crispy, turning halfway through.
  5. While the tofu bakes, make the peanut sauce: combine all the ingredients in a small saucepan and simmer gently, stirring, until it thickens to your liking. Start with 100 ml of water and add the remaining 50 ml if it gets too thick.
  6. Serve the tofu with the peanut sauce as soon as it's ready. Delicious with rice, crushed peanuts and vegetables.
